Turkey Ham, Turkey Franks and Oaxaca Cauliflower Pizza

• 1 bag (16 ounces) cauliflower pearls
• 3 garlic cloves, minced
• 2 large egg whites
• 3 ounces FUD® Oaxaca Cheese, shredded (¾ cup)
• 1 ounce FUD® Aged Flavored Cotija Wedge, grated (¼ cup)
• 1½ teaspoons olive oil
• ¼ teaspoon kosher salt
• ¼ teaspoon ground black pepper
• ¼ cup marinara sauce
• 2 FUD® Lower Sodium Turkey Franks, cut lengthwise in half, then sliced crosswise into ¼-inch pieces
• 1 ounce FUD® Lower Sodium Turkey Ham, sliced ¼-inch thick, diced
• ¼ cup thinly sliced green bell pepper
• ¼ cup thinly sliced white mushrooms


1. Preheat oven to 450°. Line cookie sheet with parchment paper.
2. In large microwave-safe bowl, combine cauliflower pearls and ¼ cup water; cover bowl with plastic wrap. Heat in microwave oven on high 12 minutes or until very tender; uncover and let stand 30 minutes. Place cauliflower in clean kitchen towel; squeeze until very dry.
3. In same bowl, stir garlic, egg whites, ¼ cup Oaxaca cheese, Cotija cheese, oil, salt, black pepper and cauliflower.
4. Press cauliflower mixture into 12-inch circle on prepared cookie sheet. Bake 24 minutes or until browned. Evenly top crust with marinara, remaining ½ cup Oaxaca cheese, turkey franks, turkey ham, bell pepper and mushrooms. Bake 7 minutes longer or until cheese melts.
