Brazilian Cheese Puffs

"Brazilian Cheese Puffs"


• 1 1/2 cups flour
• 1/3 cup light olive oil (or canola oil)
• 1 large egg
• 2/3 cup milk
• 1/2 cup FUD Fresco Cheese (crumbled, can also use queso panela or grated cheddar)
• 1/2 teaspoon salt


1. Place all ingredients in a blender or food processor and blend until smooth. Refrigerate the batter until ready to use (can be made a day in advance).
2. When ready to serve, preheat oven to 400ºF.
3. Pour about 1 1/2 tablespoons of the batter into each space in a non-stick mini muffin pan.
4. Bake in a preheated oven at 400ºF for 20 or until they are puffed up and lightly golden on the outside. Serve immediately.
